I've got an Aspen EFD1000 Pro and Avidyne IFD440. Should the heading bug be there on the IFD440 display?

You need to bypass the 429 line (ASPEN -> IFD) around the ACU, else the needed data groups will not get there.

It is a simple "Y" connection. My shop decided that the updated ASPEN maintenance manual does allow for this now.

I will pass that on to my technician - what is "ACU"? Autopilot Control Unit?

Every ASPEN PFD comes with a separate box, called the Analog Converter Unit (ACU) that allows the digital ASPEN to converse with analog devices, like legacy autopilots and radios. There is also an ACU2 which provides some extra function. There is a separate EA100 box that is only required if you have a legacy A/P that needs the ASPEN's AI information.

Probably due to certification issues, the ACUs do NOT pass all of the datablocks on the 429 bus, and the one you need is one of those affected. So, you need to direct connect the IFD to the 429 out pins on the ASPEN, which will bypass the ACU filtering. That will get you the heading bug on the IFD display.

and the parallel setup works just fine.

Depending on what radios and autopilot equipment you have, you may still need the ACU.
A
If you have an ACU2, no need, because there is no truncation of the data stream.

Actually, not so. I have an ACU2, and I needed the bypass to see the HDG bug on the IFD.
