Having trouble understanding how to set an outbound radial in obs mode. Say I had a flight plan KAVL to SUG to BZM (and on...), but then ATC directed me to fly outbound from SUG on the 120 degree radial. I could set a waypoint in that direction and fly towards it, but there should be a way to use OBS to fly outbound SUG? Can't seem to figure it out...

If you are in the real aircraft, not the simulator, this is pretty easy, when approaching SUG, you press the OBS button at the top right to go into OBS mode, and then you set your aircraft’s course pointer to 120°, and track that indication outbound.
Your example is odd, only because 120° from SUG doesn’t take you towards BZM, so you’d expect at some point to be given a different instruction. Most people use OBS when they are trying to intercept a course that puts them enroute towards or perhaps intercepting a course towards their next point of navigation. It is possible, but difficult, to get the simulator to provide OBS service; you have to fool around with the right hand knob for a while to accomplish this. If you do this successfully, you’ll see that once in OBS mode, there will be a magenta line both towards SUG on the 300° radial inbound and the dashed magenta barber pole representing the from course of 120° that you want to intercept.
