In addition to the currents means of creating a user waypoint, would it be possible to offer to create one when holding down your finger on a specific map position? Often I see something on the ground I want to mark, and it would be easier to do so via the touch screen rather than having to come up with its Lat/long, or its relative position from a moving airplane.

Maybe some day. I love the idea but the amount of User Interface icky-ness to make this happen is significant. I look at it all the time but the UI claptrap slaps it down every time.
At this point, my main hope is to handle that via the mobile apps and have them send that modified flight plan over to the IFD via WiFi. |

You can create a waypoint from the present position (PPOS). If you see something on the ground you want to mark, just fly over it, and press PPOS.
